Tiny Kitchen Cakes is a place where you can enjoy cakes & treats in a variety of ways:
It's my place to Showcase cakes I have made for friends and family.
It's your place to read about cake Experiences, (which is still fun, but with less calories than eating a cake).
This is a place where you can peruse the Idea Center. This is where you can see a slide show of individual items that can be added to any cake. All you have to do is pick out the items you want and ask for them to be added to your cake.
And of course, this is also a place where, if you are in the Chicago area, you can order one of my cakes to have a great experience enjoying it and then return to share that experience with others. Just click on the Contact link and fill in the form and I'll respond back to you.
Enjoy,

Super Easy Recipe of the Month May: Margarita Cupcakes
1 1/4 cups pre-mixed margarita mix. (Jose Cuervo Golden)
White cake
mix
3 egg whites
2 Tbsp vegetable oil
1 Tbsp lime zest
1 batch Lime Buttercream Icing
Green sugar
Candy lime slices
Mix the cake mix, egg
whites & vegetable oil according to the box, but add the lime zest, and 1 1/4 cup of the margarita mixture instead of water. Mix on
low for about 30 seconds and then increase to medium speed for two minutes (the
batter will still be a bit lumpy).
Spoon the batter into prepared muffin
pan and bake at 350 for about 25 minutes or until a toothpick registers done in
the center cupcake. Remove the pan from the oven and cool 5 minutes. Remove the
cupcakes and cool completely.
Lime Buttercream Icing
3 cups + 3 Tbsp confectioner's sugar (1lbs)
1 cup unsalted butter at room
temperature
1/8 tsp salt
1 Tbsp lime juice (or a little more to taste)
Add the butter,
confectioner's sugar, salt, and lime juice to the stand mixer and mix on low
using the paddle attachment until combined. Turn the speed to med-high until the
icing is fluffy. Add the icing to a pastry bag fitted with a 2D tip and ice the
cupcakes.
For decorating: I added a drop of green food coloring to the frosting to give it a slight hint of green. Then I added green sugar around the edge to mimic the salt on a margarita glass. The green 'lime' wedge was added to finish off the cupcake, but I had someone suggest that it was the worm that lives in the bottle of tequila.
(You can call it what ever you like.)
